Food Safety :

Food safety means assurance that food is acceptable for human consumption according to its intended use.

                                                                          OR

Food safety is a scientific method which describing handling, preparation of foods, & storage of food in way that prevents the food born diseases.



Four food safety rules :

  1. Clean
  2. Separate
  3. Cook
  4. Chill

  • Clean: 

  1. Wash hand around 20 seconds with soap & water before, during & after preparing food.
  2. Wash all the utensils & tools used during preparation of food.
  3. Wash all the raw materials ( fruit & vegetables ) under running water condition.
  4. Clean all the surfaces.

  • Separate:

  1. Separation means preventing from contamination ( keep apart ).
  2. Keep all raw meat, poultry, seafood & eggs away from fresh foods.
  3. Use separate cutting boards & plates for raw & fresh produce.
  4. During grocery shopping & during fridge keep raw meat, poultry, seafood, eggs & their juices away from other foods.

  • Cook:

  1. Cook food to proper temperature.
  2. Use a food thermometer to measure the core temperature of cooked foods.
  3. Make sure that meat, poultry, egg dishes & left over are cooked to the core temperature shown in our cooking chart.
  1. Beef, pork, lamb, veal145℉.
  2. Fish 145℉ (cook until flesh is opaque).
  3. Ground beef, pork, lamb 160℉.
  4. Turkey, chicken, duck 165℉.
  5. Ham 145℉.
  6. Leftover & casseroles 165℉.

  • Chill:

  1. Refrigerate food properly.
  2. Use thermometer to check temperature.
  3. Refrigerate perishable foods, leftover within two hours.
  4. Never thaw or marinate foods on the counter.
  5. Bacteria multiply fastest at temperature 4℃ - 60℃. 



5 Tips for more safer food.

  1. Wash your hands with soap and water before cooking.
  2. Shop for chilled food last.
  3. Defrost food in the fridge or microwave, not the bench.
  4. Cook chicken and minced meat to 75℃ .
  5. Store raw meats below cooked foods to avoid contamination from meat juices.
